An Ambassador of Green Excellence
This year, the event benefits from the prestigious sponsorship of Jean-François Bérard, a leading figure in responsible French gastronomy. Holder of the Michelin Green Star, this visionary chef embodies an approach to cuisine that reconciles gastronomic pleasure with environmental respect. "This week is a wonderful opportunity to share, exchange, and inspire each other," he says. "Cuisine can and must play a role in the major challenges of tomorrow."
His commitment to local, plant-based, and sustainable gastronomy resonates naturally with this Mauritian initiative that values short supply chains and island craftsmanship.
Water, a Source of Culinary Inspiration
A new feature of this edition: water will be the guiding theme throughout the program. This vital element and source of inspiration will lead Heritage Resorts & Golf's culinary teams through three major competitions. Chefs will compete for the title of best three-course lunch menu, best gala dinner inspired by the aquatic element with refined food and wine pairings, and best cocktail, an infused exploration mixing flowers, spices, and local plants.
Beyond the competition, the event will offer immersive experiences: tea time featuring infusions inspired by aquatic biodiversity, roundtables gathering chefs, producers, and key players in ecological transition. Each evening, gala dinners at the various venues within the resort will allow guests to discover menus inspired by the water theme and the richness of the Mauritian terroir.
A Committed Sustainability Approach
For Raoul Maurel, Chief Operations Officer of Heritage Resorts & Golf, this week reflects a deep conviction:,"Exceptional cuisine must also be responsible." The resort, recognized as a leader in sustainable tourism in the Indian Ocean, turns this event into a laboratory for innovation where Mauritian tradition meets culinary modernity."Sustainable gastronomy is not a passing trend but the future of our profession," he continues. "Cooking differently is also a way to take care of our island, its traditions, and its people."
This approach aligns with the overall philosophy of Heritage Resorts & Golf, a collection of upscale hotels nestled in the heart of 2,500 hectares of Bel Ombre, championing a sustainable luxury philosophy since its inception.
An International Reach
Far more than a mere gastronomic event, the Sustainable Gastronomy Week of Mauritius stands as a model of responsible culinary innovation. By combining gastronomic excellence with environmental awareness, it outlines a new approach to haute cuisine, where respect for the terroir and local traditions paves the way for limitless creativity.
An initiative that, under the expert guidance of Jean-François Bérard, promises to make Mauritius a cutting-edge laboratory for the gastronomy of tomorrow.
